Tomato and Pesto Bruschetta’s

These bruschetta’s are a perfect pre dinner snack. Best paired with an apéritif such as an Aperol Spritz or Martini and enjoyed in the summer sunshine.


Serves: 6

You will need:


1 packet of mini bruschetta’s

2 packets of cherry tomatoes on the vine

1 small pack of cream cheese

1 jar of pesto

A handful of fresh basil leaves (washed)

Pinch of salt and pepper


Instructions:


1. Place the mini bruschetta’s onto a large plate or tray.


2. Spread a small amount of cream cheese onto the bruschetta’s and top with a small dollop of pesto.



3. Wash and thinly slice the cherry tomatoes into small circles.


4. Gently place a circle of tomato onto each bruschetta, and finish with a sprinkle of salt, black pepper, and a fresh basil leaf.
